instructions

Preheat oven to 250 for a single recipe. If you double the recipe, set the oven at 300 and use two baking sheets on separate oven racks (don’t forget to rotate the top of the sheets to bottom shelves each time you stir). In a saucepan or microwave heat: - 1/2 c. organic oil  (I use a combo of unflavored coconut and canola, but you can use anything you want) - 1/2 c. organic honey - 1 tsp. vanilla (sometimes I throw in a little cinnamon too Mix together: - 4 c. organic rolled oats (not instant!) - 1/2 c. organic ground flax seed (it’s GF) or wheat germ (not GF) - 1 1/2 c. of any combination of chopped walnuts, almonds, pecans, sunflower kernels, pumpkin seeds, pine nuts, unsweetened coconut etc. - 3 T soy flour or high protein/GF flour ( I use garbanzo bean flour) Add the honey/oil mixture and stir until all ingredients are sticky.  Pour mixture on a cookie sheet (I line with parchment paper for easier clean up). Bake 30 minutes, stirring every ten minutes. Depending on how crunchy you want the granola, you may want to bake 10 minutes longer. Remember, after it cools, the granola gets crunchier. If you want, add dried fruit, raisins, craisins etc. after baking.  When cool, store in an airtight container. This makes 6 cups. I usually double the recipe as the granola keeps well and 6 cups goes quickly. Serve with milk or yogurt.  

mom's notes

The basic granola recipe is **6 parts dry to 1 part wet**. So you can combine any ingredients you want as long as it meets the formula of dry to wet.
