Julia Child’s Vichyssoise

Description
Potato and leek soup served cold makes a great summertime soup!
Ingredients
3 cups Peeled, Sliced Potatoes
3 cups Sliced White Of Leek
1-½ quart Chicken Stock
1 cup Whipping Cream
Salt And White Pepper, To Taste
3 Tablespoons Chives, Minced
Preparation
Simmer the vegetables in the broth until very tender, about 40-50 minutes. Puree then soup in a blender or through a food mill and then a fine sieve.
Stir in the cream and season to taste, over salting very slightly as salt loses flavor in a cold dish. Chill. Serve in chilled soup cups and decorate with chives.
mom's notes
I made this soup for the Nunsense cast during dress rehearsals. It plays a prominent part in the show's plot so I thought it would be fun to try with them. While the name sounds exotic, the soup is really basic but tasty. If you want to make it vegetarian, obviously you can swap veggie stock for chicken stock. Just make sure it's not a super concentrated stock since the soup is supposed to be subtle and the stock should not overpower the potato/leek flavor. I served it hot, but if you like cold soup, I bet that's good too. Just don't forget to add the cream like I did when I made it. It changes everything!
