Stuffed Squash

instructions

Stuffed Squash
1/2 C chopped onion
1 clove garlic, minced
1 stalk celery, minced
1/4 C chopped walnuts
1/4 C sunflower seeds

Add:1 C crumbled whole wheat (or any) bread
1/2 tsp thyme
1/2 tsp sage
1 T lemon juice

Saute onion, garlic, celery in butter or oil until tender crisp. Add walnuts and
sunflower seeds. Cook one minute more. Add bread crumbs, thyme, sage, and
lemon juice. Cook and stir well until well mixed. Remove from heat. Add 1/2 C
grated cheddar cheese. Stuff two **baked **acorn squash halves.
Bake at 350 for 25-30 min.

mom's notes

This make squash a little more interesting as a side dish and more substantial as a main dish on vegetarian night.
