Carrot Quiche

This a fairly hearty quiche because of the carrots. Not being a huge carrot fan, I didn't think I would like this quiche, but I love it. We eat it on our "vegetarian nights" with a big green salad. It could also make a nice breakfast or brunch dish. I would not recommend making it in advance though. I let it sit awhile once with the egg mixture in the crust before baking it. I think it made the crust sort of soft, bordering on doughy/soggy. So I won't do that again. I also might try pre-baking the crust a few minutes longer than the recipe calls for next time. That might make it a little less doughy than mine was.
