instructions
**Ingredients:**
- 10-12 small round red potatoes pared
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- 1/8 tsp pepper
- 1 and 1/2 cup milk
- 1/2 cup cheddar cheese grated
- 1 teaspoon paprika
**Instructions**:
Cool potatoes in a small amount of salted water. Drain. While potatoes are cooking, prepare the white sauce. melt butter in a saucepan and blend in flour, salt, and pepper. Gradually stir in milk and cook over low heat until thickened, stirring constantly. Add diced potatoes and mix. Place in a casserole dish. Sprinkle w/cheese and place in hot over 400 degrees, until cheese melts. Before serving, spring with paprika and garnish with parsley.
This makes more than enough sauce. You can probably cut it back a bit.
