Parmesan Chicken

Layer in a greased baking dish: 
4 deboned chicken breasts lightly browned in oil  
fresh broccoli spears (enough for 4 people and a little extra) lightly steamed/tender cooked 

In a saucepan combine:

  • 1 can cream of chicken soup
  • 1 pint whipping cream
  • 1 c. grated parmesan cheese

Bring to a boil and add a drop or two of hot sauce. Cook for a few minutes stirring constantly. Pour over chicken and broccoli. Sprinkle with more parmesan and a little paprika. Bake at 300 for 45 minutes or slightly longer depending on the thickness of the chicken. 

Served with rice cooked in chicken broth with a pinch of saffron or some nice colorful or herbed pasta.
