**Ingredients:** - 1 and 1/2 cups yellow cornmeal - 1/4 cup all-purpose flour - 1 teaspoon soda - 1 teaspoon salt - 1 teaspoon sugar - 2 cups buttermilk - 2 tablespoons salad oil - 1 slightly beaten egg yolk - 1 stiffly beaten egg white **Instructions:** Mix dry ingredients. Add buttermilk, oil, and egg yolk; blend well. Fold in egg white. Let stand 10 minutes. Bake on hot griddle. Makes 16 four-inch pancakes.

Great twist on the boring pancake. Try the recipe for the Cornmeal Griddle Cakes. The buttermilk makes them really great. Straight out of Better Homes and Gardens cookbook. I have not tried the cornmeal waffles on the second page, but I bet they are just as good. There is also a recipe for crepes in the mix. I used to make those once and awhile for dinner with various chopped meat/veggies for you to throw in them. Easy peasy.
