Homemade Meatballs

homemade meatballs
instructions
3/4 lb ground beef
1/4 lb ground pork
1 c fine dry bread crumbs
1/2 c grated Parmesan cheese
1 T minced parsley (or about 3X more if using fresh)
1 clove garlic minced fine
1/2 c milk
2 eggs beaten
salt and pepper to taste
Add all ingredients in a bowl and mix well. Roll meatballs into about an inch in size. Brown meatballs in hot oil on all sides and drain on paper towel.
Add to your favorite tomato or cream sauce 20 min. before sauce is done.

You can never make too many of these. Especially because it's a bit of a process so you want to make a lot at one time. They freeze well too. I add more garlic to mine than the recipe calls for. For bread crumbs I use anything dried I have in the pantry--crackers, pretzels, etc. I've never done it, but you could use Italian sausage in place of the plain ground pork if you want a more Italian flavor. Or, you could throw in a few herbs if your sauce is on the plain side. I happen to like the plain meat with that bit of cheesiness.
I have attached the original recipe just for fun. This was one of the first recipes I loved. It came from my high school boy friend's sister. He and I used to make it for ourselves and friends. My first attempt at a "dinner party." We thought we were pretty cool....
FYI, the sauce part of the original recipe is nothing special but adequate if you want to make something quick.
