refrigerator dill's
instructions
Put fresh dill, onion slices, garlic, green pepper slices, and a tiny hot pepper (if you want a little kick) to the bottom of a glass container big enough to hold cucumbers and the vinegar mixture. Peel and slice cucumbers either in rounds of lengthwise and layer in the container.
Boil:
- 1 pt. apple cider vinegar
- 1 qt. water
- 3/4 c. sugar\*
- 1/4 c. pickling salt\*
- dash of celery seed if you want
Cool vinegar mixture and pour over cucumbers. Chill. Store in refrigerator
\*adjust sugar and salt to your desired taste
mom's notes
We had tons of cucumbers from Otis/Dad’s garden this summer. I struggled with what to do with them all besides giving many away. This recipe helped deal with the cucumbers that got super large before we could pick them. FYI, I kind of combined recipes I got from Grandma and Karla—so this is a hybrid. The cucs are quite tasty, but next time I make them, I will put in less salt than what is on the recipe. I added, onion garlic, green pepper according to taste. The little pepper was an afterthought which I really appreciated.
